Until the invention of the refrigerator people used to eat large quantities of fermented and cultured foods, Because food preservation was necessary step.
Currently I have a few beautiful fermented foods in my kitchen four batches of Kombucha ( a delightful fermented and cultured tea) one large crock full of sauerkraut and two jars of pickled veggies.
