Veggie Burgers
So many people have requested veggie burgers and I have been reluctant to admit I do love a good burger, but the thing is, a traditional meat and cheese burger breaks a lot of truly good food rules. First of all, when considering digestion, one should not mix meat with starch, it makes for somewhat of a belly bomb, top that off with the high saturated fat, and cholesterol content, it's just not worth it.
So here's my rendition of a DELICIOUS low fat, high nutrient, very tasty, and beautiful burger.
Simmer 1 cup lentils and 20 bay leaves till tender, season with chipotle, cumin, garlic, sea salt. Add 2 cups fine sliced crimini mushrooms, sautee 1 bell pepper, and one onion, add a pinch fresh grated ginger, stir in 1/2 cup tofu, 2 eggs. Form into patties, pan fry in a bit of sunflower oil, then BBQ (for an authentic smoky flavor)
Serve on a whole sprouted grain bun, with heirloom tomatoe slices and avocado, the very best mustard you can find.
