Lettuce Wraps

Carrot Cream

Dressing or Dipping Sauce

2 carrots

½ cup cashews

½ cup pumpkin seeds

¼ cup olive oil

¼ cup cider vinegar

1 clove garlic

½” shredded ginger

2 dates

pinch sea salt

water as needed to blend

Blend all ingredients  (preferably in a Vita Mix) blender till creamy and smooth. Excellent dressing for chopped kale salad.  Dipping sauce for lettuce wraps.

Chopped kale

Chopped celery

red onions

toss with carrot cream, season with sea salt and pepper
