Today in the Market Kitchen!

Brown Rice Pilaf

2 cups brown rice
31/2 cups water

bring to a boil, then simmer with lid on 45 minutes

sauteed onions, peppers, and garlic

toss all ingredients with olive oil and sea salt to taste...enjoy!


Zucchini Panini Sandwich

sauteed or grilled slabs of summer squash, onions, peppers,
sliced fresh tomatoes, walnut pesto, on whole grain, grilled bread (Turkovich cheese optional)


Black Eyed Pea Soup

1 lb dry black eyed peas
water to cover
2 onions, chopped
bring to a boil, then simmer beans in enough water to cover (the more water you use, the "soupier" your beans will be) 60 to 90 minutes

add grilled or sauteed summer vegetables (squash, onions, peppers, tomatoes)
2 cloves fresh, chopped garlic
1 tsp ground cumin
2 tsp curry powder
sea salt to taste

1 can coconut milk (optional)


Corn Salad

6 cobs fresh, sweet corn- using a knife, remove kernels from cob
1 red onion chopped
1 clove garlic chopped
1 large, fresh tomato chopped
toasted almonds

(summer squash, cucumbers, red bell pepper, radishes, turnips, ...whatever is in season)

dress with:
1/8 cup olive oil
1/4 cup fresh lemon juice or apple cider vinegar
sea salt and fresh ground pepper to taste

Fresh peach or strawberry smoothies, and aqua frescas
